What day is it anyway?

I’ve been quarantined down at my parent’s lakehouse for the past 6 weeks. All things considered, I can NOT complain about anything and just trying to soak everything up.

SUN

Y’all know I geek out for a good sunrise, but these sunsets on the lake are straight fire. I will never get sick of ending the night with this Texas sunset (I mean until I leave and go back to the city).

GRUB

The first couple weeks started with mom & dad always doing the cooking - but I slowly inched my way into taking over a couple meals a week.

ASIAN BOWL: Hibachi buy healthy - this quick recipe is the best way to get all your veggies in while feeling indulgent
BUDDA BOWL:
A slicebaby staple - sautéed kale & mushrooms, roasted squash & onions, goat cheese and protein of choice. This time I luckily had Dave’s pulled pork
NOODS BOWL:
A newbie recipe from one of my favorite cookbooks, Thug Kitchen . I adapted mine a bit with different vegetables and the addition of sesame sticks. Now if you haven’t had sesame sticks before, grab your mask and get to the grocery store now. They are the perfect topper for salads, asian noods, and midday snacks.
PIZZA:
I mean were you surprised? The combos were on point: (1) mushroom, caramelized onion, goat cheese balsamic (2) Dave’s pulled pork, mozzarella & bbq sauce (3) corned beef, roasted peppers & cheddar cheese, (4) a margh (duh)
EASTER DINNER:
Guys, this meal - cucumber tomato salad, smoked lamb (cannot explain) and a potato cake that is a carb lovers dream
CAMPSIDE NACHOS:
These babies were cooked next to my rents’ camper as they tested out their sprinter van for the night. The secret to the best nachos - castiron skillet, however Santitas chips are also a game changer for me.
BAKED APPLES: Mom & Dad went a little overboard with buying apples so I put them to good use for cinnamon baked apples.
MORNING COOKIES:
now these aren’t necessarily “breakfast cookies”, but when you come out of your room at 7am and Dave is working the kitchen aid mixing up some cranberry oat nut cookies, they deserve this name.

LAKE

The time here has involved a lot of time outside, family walks, weekend hangouts near the camper & puppy snugs (when availablE)

CHEERS

In the bedell house, we have a no drinking during the week rule - which honestly is savings grace during this time.

The rules: Friday evening old fashioned to red wine. Weekends after 4pm: pick your poison. Recently I have been feeling aperol spritz (champagne & Aperol) & fresquila (tequila & Fresca).

“PASSING” THE TIME

Story time: so I can get a little light headed from time to time. One morning I got up from my morning prayer time and gelt a little light headed so I went to go grab a wall…next thing I know I was standing up with two pictures broken on the ground. Turns out, I passed out and my six foot body hitting the ground caused these two frames to pop off the wall & hit the ground. It was fine, everything’s fine. I’ll keep yall updated lol.

BOOKS! This is one of four books that I finished since being in texas and this is one that I will be holding onto & referring back to a LOT. lysa terkeurst, I love you.

family time: Oasis has a couple opportunities for us to connect. one is pre-church coffee time and another is o/groups - either way, I love seeing my family and hashing out the bible while trying to figure out this thing called life.

podcast: So yeah, if you didn’t know, this is a thing. I have had a couple handful of episodes now and loving every minute of it.

faith

This has been a really interesting month. there have been a couple highlights this month:

rest: be still with him & listen to him. during this time, we can’t fill our schedule to avoid, we can’t fill the noise. we need to be content with him and nothing else. With rest with find restoration.
HUMILITY: let the things that we hear seep into our souls. let us be humbled and let him soften our hearts to be tweaked for the better. let us not have our pride keep us from turning to him and changing us.

Through it all, I feel very blessed right now to take this time to dive into things that have been on my heart, to grow my relationship and build a stronger foundation to be ready for the next season.
